- 1Preheat your air fryer to 200 °C (390 °F).
- 2Place chicken fillets in the basket. Heat for 16 minutes, turning over halfway through heating time.
- 3In a large skillet, heat the olive oil over medium heat. Add the diced red bell pepper and onion to the skillet and cook until the vegetables are tender and slightly caramelized, about 5-7 minutes.
- 4Whisk the eggs in a bowl and add them in the skillet. Cook for another 2 minutes.
- 5Transfer the vegetables and eggs in a bowl. add the mayonnaise and stir well. Season with salt and pepper to taste.
- 6Lay out 4 Tortillas on a flat clean surface. Evenly distribute the cooked chicken pieces, cooked bacon, egg and mayonnaise mix and sautéed vegetables over the tortillas. Sprinkle the grated cheddar cheese blend over the toppings. Top each with another tortilla to form a quesadilla.
- 7Heat a large skillet or griddle over medium heat. Cook each quesadilla for 2-3 minutes on each side, or until the tortillas are golden brown and the cheese is melted.
- 8Cut each quesadilla into quarters and serve hot.
